Protein, carbohydrates and fat are the macronutrients: the components that make up most of the dry weight of food and supply almost all of its energy.

Protein

USDA protein values are usually calculated from the food's measured nitrogen content multiplied by a conversion factor. Label values are what the manufacturer declares.

Carbohydrates

In USDA data and on U.S. labels, total carbohydrate includes dietary fiber and sugars. In the European Union and some other regions, labels list carbohydrate without fiber. Because of this, carbohydrate values for branded products from Open Food Facts are not always comparable with USDA values for similar generic foods.

Fat

Total fat is broken down where data allows into saturated, monounsaturated, polyunsaturated and trans fat. The subtypes do not always add up to the total, because the total also includes other fatty compounds and not every subtype is measured.
